Tuna Couscous Salad

Cooking Time: 5 minutes 

Notes: Light, refreshing, and very quick; no cooking needed if using hot water only. 

Ingredients:

  • Main:

    • 1/2 cup instant couscous

    • 1 tuna packet (or chicken packet)

    • 1 tbsp olive oil

  • Extras:

    • 2 tbsp dried cranberries or raisins

    • 1 tbsp chopped nuts (optional)

Instructions:

  1. Pour 1/2 cup boiling water over couscous, cover, and let sit 5 minutes.

  2. Fluff couscous with a fork.

  3. Stir in tuna, olive oil, cranberries, and nuts.

  4. Add salt and pepper to taste.
