Tuna Couscous Salad

Notes: Light, refreshing, and very quick; no cooking needed if using hot water only.
Ingredients:
Main:
1/2 cup instant couscous
1 tuna packet (or chicken packet)
1 tbsp olive oil
Extras:
2 tbsp dried cranberries or raisins
1 tbsp chopped nuts (optional)
Instructions:
Pour 1/2 cup boiling water over couscous, cover, and let sit 5 minutes.
Fluff couscous with a fork.
Stir in tuna, olive oil, cranberries, and nuts.
Add salt and pepper to taste.
