DIY Backpacking Pad Thai

Yield: 1 serving (~650 cal)

Cooking Time: 7–10 minutes 

Notes: Sweet, salty, and satisfying after a long day. 

Ingredients:

  • Main:

    • 1 package instant rice noodles

    • 1 tbsp peanut butter

    • 1 tbsp soy sauce packet

    • 1 tsp lime powder or a squeeze of lime packet

  • Extras:

    • Crushed peanuts

    • Dried vegetables

Instructions:

  1. Soak or boil rice noodles according to package instructions.

  2. Drain most water, leaving a little behind.

  3. Stir in peanut butter, soy sauce, and lime.

  4. Top with crushed peanuts and dried vegetables.
