Backpacking Pesto Pasta

Cooking Time: 8–10 minutes 

Notes: Tastes gourmet but uses dry or shelf-stable ingredients. 

Ingredients:

  • Main:

    • 1 cup small pasta (or instant pasta)

    • 1 tbsp olive oil

    • 2 tbsp pesto powder or shelf-stable pesto packet

  • Extras:

    • 2 tbsp sun-dried tomatoes

    • 2 tbsp Parmesan cheese (powdered or hard)

Instructions:

  1. Boil water and cook pasta until tender.

  2. Drain most water, leaving a little for mixing.

  3. Stir in olive oil, pesto, sun-dried tomatoes, and Parmesan.

  4. Mix well and serve.
